Beet-licious Liver Cleanser

The main star of tonight’s show is… you guessed it – beets! Why do beets and their leafy greens deserve such worthy acclaim? The list goes on:

1.) Helps lower blood pressure with naturally occurring nitrates, which our bodies convert into nitric oxide to facilitate vasodilation (expansion of blood vessels).
2.) Boosts your stamina by improving exercise capacity so you can work out longer! For more about its impressive role in enhancing athletic performance, continue reading here.
3.) Reduces inflammation with a unique nutrient called betaine, which helps protect cells/enzymes/proteins from environmental stress.
4.) Wards off cancer with powerful phytonutrients, which help give beets its deep crimson coloring.
5.) Rich in nutrients like immune boosting vitamin C, potassium, manganese and folate.
6.) Detoxification support for the liver.

Incorporating beets into juices adds an earthy, velvety flavor that could use some getting used to. It is also an incredibly potent detoxing ingredient, so if you’re new to the wonders of juicing beets, start off with an ounce or two several times a week. I’ve found that it pairs nicely with carrots/citrus/celery/lemon/ginger, as the recipe below shows. You can play around with various fruits and vegetables, of course. I’d imagine that apples (don’t they make everything better?) and cucumbers would help make the juice milder for first-timers by adding more of a liquid component. Just don’t let the pigments scare you off. Betalain could potentially turn your pee pink or red – just a fair warning!
